German Potato Salad
(a 4th of July Must Have, along with Mom's decadent Pina Coladas~)
net bag of tiny red potatoes, maybe 3 Cups?
Boil or microwave til tender.
Rinse and slice into bowl with chopped celery
and scant 1/4 C of finely minced sweet Vidalia or red onion, or to taste.
[but not a really onion-y recipe, just a hint!].
Toss with a simple vinaigrette of cider vinegar, olive oil, salt, pepper, sugar, tarragon, parsley.
Cover and refrigerate.
Next day about 3 hours before the picnic, take from fridge and toss.
Add more vinegar if not zesty enough.
Add a little cold water if the salad seems dry.
Close to serving time add 3 or 4 well chopped hardboiled eggs
and 1/4 C of bacon bits. [made fresh, not from a jar!].
Toss again, serve room temp.
Good for hot weather as the dressing won't go bad easily.

I don't think I've ever had that kind of potato salad, I'll have to give it a try one of these days.
ReplyDeleteIt's been HOT here, too, and so of COURSE our air conditioner decided to die of old age last night....soonest possible fix is Friday. May go camping at my daughter's house where their ac is working!

DeleteHappy 4th to you all! What a sweet quilt. ALL of your decorations are cute. Especially like seeing your flag out on the deck. Is that seashell wreath new? Mo looks pretty cute too! My Mom used to make a similar potato salad. I could never quilt duplicate it.

Happy Fourth, Kel! The seashell wreath is new, from Home Goods. It was for my front door but I decided I'd enjoy it more on my deck. The shells are drilled and wired on so it may last better than the glued ones.
DeleteMy potato salad is never quite like my mom's either, even tho this is her recipe and she walked me thru making the salad step by step many times. Maybe the fact that she used hot bacon grease, besides olive oil. I think you told me your mom too had a drippings jar in the fridge? And as Penny mentions above, sometimes served warm [???] not sure how that was accomplished. Hot bacon and drippings right before serving?
But my way is good too, it got gobbled up this evening at the BBQ.

ReplyDeleteOh everything looked wonderful! Even Mo got into the 4th of July spirit! We had the girls over and did some works and had a picnic meal and then went to see the big works together sporting glowing necklaces. Hot and toasty here too! Enjoy! Kit
